Castillo
Jairo Arcila grows a variety of different coffees in Pijao Colombia. This castillo was mixed with lulos during a dry anaerobic fermentation that lasted 72 hours with the pulp on. Lulo is a lime and rhubarb like tasting South American fruit. As a result of this process this coffee is infused with strong and sweet passionfruit and lulo notes but also sports pomelo like acidity with a slightly herbaceous minty finish.
