Jairo Arcila grows a variety of different coffees in Pijao Colombia. This castillo was mixed with lychees during a dry anaerobic fermentation that lasted 72 hours with the pulp on. As a result of this process this coffee is infused with sweet tropical notes and apricot but also sports a sweet milky body, and zest finish.
