Mokka is a new varietal of coffee developed in Colombia distinct for its relatively small screen size and its concentrated flavour. Manually picked at the Hawaii farm in Sasaima Colombia, our Mokka is rigorously tested prior to picking to ensure the cherry has reached its peak maturation. After picking the coffee is left in a silo for 48 hours and the is moved to dry for 28 days. To ensure the coffee stabilises and its astringent acidity is regulated, the coffee is put into storage for at least 3 months post processing. This bean achieved a cupping score of 94 and is very aromatic, sports intense concentrated berry and plum notes while remaining sweet and drinkable.
