Jairo Arcila owns a number of coffee farms in Quindio, Colombia. Over the years, we have been lucky enough to get our hands on many of the exotic coffees that Jairo has produced including a number of geshas and experimental processes. This coffee is a Sidra varietal and was fermented anaerobically for 40 hours before being gently washed and sundried. This unique processing method has imparted strong jasmine almost sencha tea notes to the coffee with citrus and sweet cocoa to finish.
